RESEARCH OF THE IMPACT OF PACKAGING MATERIALS
AND RECIPE INGREDIENTS FOR THE CONSERVATION
OF THE CONSUMPTION PROPERTIES OF GINGERBREADS,
CEREAL PUFFS AND DRY BREAKFASTS DURING THEIR STORAGE
Introduction. An important criterion for the quality of food products is their
ability to maintain typical indicators for a long period. Freshness retention is a problem
common for various food products. Specialists believe that the main processes of
freshness loss include oxidation (rancidity), loss of flavor and moisture, staling,
souring, color change, melanoidin formation, etc. Compliance with the requirements
of raw materials' quality, optimization of the technology of product processing, sanitary
state and advanced packaging – all this will increase the storage time of products and
reduce their microbial contamination, and thus create products that meet the
requirements of consumers [1].
At the present stage of development, it is important to take into account the
peculiarities of different packaging materials, since they are playing an important role
for the formation of goods' assortment, their image and assurance of preservation
during the product's promotion.
It is necessary to use packaging materials that help maximize the shelf life of food
products, in order to achieve the desired results. The sealed packaging ensures long-
term preservation of products' quality thanks to the technological and economic
advantages. Such a package allows to prevent the penetration of atmospheric oxygen
due to high gas and vapor permeability; and to ensure the resistance against the
development of microorganisms under the condition of proper sanitary cleanliness of
finished products. In addition, vacuum packaging contributes to increasing the
profitability of production by reducing the cost of packaging and sales promotion,
improving the marketable condition of the packaged product, its attractiveness,
lengthening of storage time and the convenience of realization.
In many countries, the manufacture of packaging materials is put on a modern
industrial basis, and synthetic plastics have become the most widespread. The main
problem of using polymeric packaging is an expensive recycling process.
