INTRODUCTION
The fourth volume of the monograph includes 15 sections, each of which is
devoted to a specific problem of national economy’s sustainable development.
The first third section “PRESERVATION OF SOIL FERTILITY AS A BASIS
FOR IMPROVING THE EFFICIENCY OF MANAGEMENT IN THE SOUTHERN
STEPPE OF UKRAINE”. Ukraine is known as one of the richest countries in the world
for high-quality fertile soils, which are the main means of its agricultural industry. The
changes that have taken place in recent decades with the fertility of the main soil types
require significant improvement. After all, this is an essential condition for obtaining
guaranteed levels of productivity of the main crops and ecological balance in general.
A significant role in providing the state with grain, oilseeds, vegetables, melons and
other products belongs to the zone of the southern Steppe of Ukraine, which is known
as the breadbasket. The article presents the data of changes in the main indicators of
soil fertility, measures of their improvement and preservation, modern approaches to
increasing the yield of crops in the conditions of climate change and insufficient
resource provision, the ways of growth of plant productivity and efficiency of moisture
use.
The second section “DEVELOPMENT OF PRACTICAL MEASURES AND
WAYS OF THEIR REALIZATION FOR CONTROL, MANAGEMENT OF DAIRY
RAW MATERIALS AND DAIRY PRODUCTS IN ACCORDANCE WITH EU
NORMS”. Compulsory microbiological criteria should be applied only in relation to
those products or in those points of the food chain, which cannot be applied to other,
more efficient ones. As well as in the cases, when the microbiological criteria is
expected to increase the protection degree offered to the consumer. Microorganisms
that make up the components of the criteria must be generally recognized, for example
pathogens or indicator organisms that concern the specific food products and
technological processes. The obtained results in terms ofusing the improved method
sof Listeria monocytogenes, Salmonella and coagulase-positive Staphylococcus
detection in milk and dairy products were steady and authentic, so these figures can be
used in evaluating the safety of milk and dairy products. In addition, it should be noted
that the techniques are simple, economical in execution and its results give certain
quality indicators.
The third section “PHYSICO-CHEMICAL INDICATORS OF SLAUGHTER
PRODUCTS FOR THE USE OF VARIOUS SELENIUM SUPPLEMENTS IN THE
DIET OF PIGS”. Purpose – to study the effect of feeding selenium inorganic and
organic forms on productivity and quality of pigs. To achieve this goal, it was necessary
to solve the following problem: to examine the effect of selenite, selenate and sel-Plex
diet on performance and quality indicators pork. Level of the selenium in ration before
