form of organic and inorganic compounds, and its content in these compounds depends

forms of selenium in nature are selenates and selenites. However, organic compounds
such as selenomethionine (CH3-SeCH2-CH2NH2-COOH) and selenocysteine
(HSeCH2-CHNH2-COOH), which are analogues of the corresponding sulfur-
containing amino acids [4], are the dominant forms in products of plant origin.
Despite intensive intestinal absorption of inorganic compounds of selenium
(selenite, selenate, etc.) in the intestines, they have lower biological availability
compared to the organic compounds of this element. It is also established that selenate
