monoterpenes and diterpenes are composed of two branched unsaturated C5 units
(isoprene) having a molecular weight of 136 and 154 amu. The sesquiterpenes are
composed of three isoprene units counting a molecular weight of 204 amu [22].
The research of adsorption properties of BSA and casein by GS-O has presented
their selectivity for monoterpenoid hydrocarbons according to the molecular weight.
The initial content of a model mixture and contents of a model mixture after 5min,
15min, 30min, 45min and 60 min of the adsorption and the next emulsification were
investigated. They have shared on three groups with low, medium and high molecular
weight (136 amu, 154 amu, 204 amu respectively). The dynamic of adsorption of odor
- active compounds in applying by BSA and casein has presented different degrees of
adsorption for each group (Table 1, 2).
