The content of a model mixture after emulsification consisted of 65%
monoterpenes, 19% diterpenes, 16% sesquiterpenes for BSA and 5% monoterpenes,
18% diterpenes, 78% sesquiterpenes for casein compared with its initial content.
According to the dynamic of adsorption of odor - active compounds in applying
by BSA and casein odor - active compounds gradually adsorbed for 30 min. After 30
min it was indicated desorption process of odor - active compounds which was
characterized by the rapid transfer of odor - active compounds back to the model
mixture.
The determination of the BSA and casein mass ratio for a flavor
nanoencapsulation by emulsification. The odor - active compounds content of
rosemary EO was necessary to find out the mass ratio of BSA and casein. A total of 31
odor–active compounds were found in rosemary EO such as camphor, 1,8-cineole, α-
pinene, camphene, myrcene, bornyl acetate, verbenone, limonene, borneol and α-
terpineol. Table 3 lists their retention indices (RI), odor descriptions and odor - active
compounds content of rosemary EO.
