The mass ratios of BSA and casein have been determined using the computer
program "Combination Modelling". In order to achieve the objective functions, the
contents of compounds with low, medium and high molecular weight total in rosemary
EO, BSA and casein have been introduced in the basic program environment. The
orderly process of cyclic calculations has been determined the solution of the system
as a mass ratio of BSA and casein, reaching the maximum reproducibility of the odor
- active compounds composition of rosemary EO. In this case, the program offered
several variants of BSA and casein combination. Only one had the maximum
reproduction of the odor - active compounds composition of rosemary EO and with the
maximum quantitative use of BSA and casein as 34:67.
The study of emulsion properties and thermal behavior of emulsion
encapsulating rosemary EO. Rosemary EO was (O nanoencapsulated in complex of
BSA and casein (34:67) by emulsifification. The nanocapsules were obtained while
fixing the ratio of water in oil (W/O) emulsion and oil in water (O/W) emulsion and
varying complex of BSA and casein concentration at 3-5%, the surfactant in blend of
Span 80 and Tween 80 [21]. Table 4 lists average size of nanocapsules and
encapsulation efficiency.

The average size range of nanocapsules was 268-423 nm. The preliminary results
on the encapsulation efficiency were found to range 13.78-95.56%. Therefore, the
nanoemulsion with mass ratio of researched nanoparticles 34:67 and 5% concentration
of their complex characterized for stability, viscosity and droplet size.
For evaluation of thermal behavior of nanoemulsion encapsulating rosemary
essential oil (BSA and casein of 34:67, 5% BSA and casein complex, Span 80/Tween
80 of 60/40) to the typical temperatures of baking processes (200–250°C), odor - active
