hydrolysis of the lipid fraction of the cookie Zagadka. The acid number of this sample
increased 2.3 times compared to the initial value, while the control – 4.1 times.
Thus, the inclusion of a powder from the roots of the dandelion recipe of a new
sugar Zagadka cookie allows you to extend the shelf life of it packed in boxes of
corrugated cardboard to 4.5 months under standard conditions.
In the future, it is planned to investigate changes in the quality of the lipid fraction
of sugar cookies not only under the influence of natural antioxidants, but also a variety
of packaging materials. And the search for other natural supplements of plant origin,
which showed antioxidant activity, and enriched products essential substances.
