The protein content in silver carp flesh is within 16 %, fat content is from 7.0 to
8.0 %, which makes it possible to characterize this raw material as protein and medium
fat content.

According to the data of Bylin V.I., PWI is in the range from 7.0 to 37.0% in
various species of fish, respectively, the lowest values are characteristic for low-protein
fish, large values are characteristic for high-protein fish. Thus, the parameters of PWI
of carp and silver carp confirm belonging of these fish to protein fish.
Based on PWFI, it is possible to speak more about succulence of fish flesh. In
silver carp, this indicator is 21.79%, which is in the range at which the flesh of these
fish is the most succulent.
In the life of humans and animals, an essential role is played by essential
polyunsaturated fatty acids (PUFA). These include the precursors of more unsaturated
fatty acids: linoleic acid (C 18:2) of the ω6 group and linolenic acid (C 18:3) of the ω
3
group.
Polyunsaturated fatty acids are necessary for the construction of cells of various
tissues, regulation of lipid metabolism and normal development of the organism, and
also are responsible for elasticity of the walls of blood vessels. Therefore, their
deficiency in the human body can cause significant disorders.
Presence of saturated, monounsaturated and polyunsaturated fatty acids is
characteristic of fatty acid composition of silver carp flesh lipids (Table 3).
