FIRE SAFETY IN THE WINE INDUSTRY
Introduction. It is well-known that the wine-making field of the food industry is
connected with different types of activities concerning production and processing of
grapes (growing of grapes of technical varieties, production of wine materials from
grapes, technological operations on supervision of wine materials under keeping,
seasoning and storage, wine bottling). The areas, which are suitable for such activities
most of all, according to nature and climate conditions, in Ukraine, are: Odesskaya,
Khersonskaya, Mycolayivskaya, Zakarpatskaya regions. Wine-making is divided into
primary (processing of grapes and production of wine materials) and secondary
(processing and seasoning of wine materials with the aim of giving them a distinctive
flavour, bouquet and stability).
It is reasonable to process grapes only in the area of its growing – at the plants of
the primary wine-making. A lot of enterprises of the primary wine-making have begun
to produce wine, grapes vodka and so on independently for the last ten years.
According to the official data, approximately 200 enterprises in Ukraine deal with
processing of grapes, production of soft and sparkling wines, champagne and cognacs.
Standards of legislation in Ukraine [1] allow to deal with these activities irrespective
of forms of ownership. That’s why, certain agricultural and farming industries are
enlisted to wine-making. So, according to the data of the Ministry of Agricultural
Policy, in 2016 Ukrainian producers increased processing of grapes into wine materials
by 30,8 % in comparison to that in 2015 (nearly 254,000 tons) [2].
