DEVELOPMENT OF COMPOSITION OF BALANCED EXTRUDED
GRAIN PRODUCT WITH LINEAR PROGRAMMING APPLICATION
Introduction. One of the most important factors that causes a person's health is
nutrition. Rational nutrition helps prevent diseases, prolong life, create conditions for
improving the body's ability to withstand adverse environmental conditions, provides
normal growth and development of children.
Creating an assortment of products of high nutritional value for correction of food
rations of the population is an actual task of the present. At present, recipes and
technologies for obtaining various types of cereal products are widely used in the mass
nutrition of the population, namely, bakery and pasta products, food concentrates,
enriched with various additives of both plant and animal origin. The analysis of dry
snacks presented in the Ukrainian market showed that these products are not balanced
in the majority of the composition of the main nutrients, contain a significant amount
of carbohydrates, fats, dyes, flavors, etc. [1]. Therefore, the direction of development
of extruded dry breakfast based on grain crops with the inclusion of natural additives
of vegetable origin in order to obtain products with a given nutritional, biological and
energy value is relevant. Expansion of the range of grain products will reduce the level
of protein deficiency, enrich the diet of the population with the necessary vitamins,
macro- and trace elements, and other biologically active substances.
Analysis of literary data and problem statement. The nutrition status of the
population is one of the most important factors that determines the health and
preservation of the gene pool of the nation. Proper nutrition helps to prevent diseases,
prolong life, create conditions for improving the body's ability to withstand adverse
environmental conditions, provides normal growth and development of children [2].
The nutrition structure of the Ukrainian population does not correspond to the
modern principles of rational nutrition and practical nutrition. In the diet of the
population, many baked goods, potatoes and few main sources of valuable protein
(meat, fish and dairy products), fiber, micronutrients (vegetables, fruits, nuts, etc.) [3].
The results of studies on nutrition status in different regions of Ukraine show that
the structure of nutrition and food status of both children and adults is characterized by
serious violations. Among them there is a shortage of full (animal) proteins,
