As a result of the program the prescription composition of enriched extruded grain
products was obtained (Table 4).

According to the results of calculations, it was found that the optimum
formulation with the content of whole grain millet grain is 15%. In this formulation,
the ratio of all essential amino acids is most closely related to the ideal protein. That is
why in the future we studied qualitative indices of the extruded grain product made
according to this formulation.
The technological scheme of production of the enriched extruded grain product
consists of the following steps, which are typical for food-concentrate production:
- preparation of raw materials and additives for production;
- preparation of the prescription mixture of the initial ingredients of extruded grain
products;
- Dosage and mixing of ingredients;
- extruding;
- packaging, packaging and labeling.
Extruded cereals, enriched grain millet tsilnorozmelenym and table salt obtained
by fundamental technological scheme shown in Fig. 1.
Wheat and corn grits are sifted, subjected to magnetic purification and dosage on
a weight dispenser. Salt of the kitchen is subjected to sifting, magnetic purification and
dosage.
The mixture of dry ingredients is blended for 5 minutes to a homogeneous mass.
The prepared mixture of ingredients is fed to an extruder, where its thermal and
mechanical processing takes place (τ=3…5 s, t=145…150°С, р=2...3 mPа).
The processed mass is pressed through the slabs, cut with a knife, obtaining
extruders, depending on the configuration of the apertures of the fillet of the matrix, in
the form of asterisks, rings, pads, etc. The resulting extruders are cooled to a
temperature of 20 ... 25 ° C and a mass fraction of the moisture of the product is 6 ...
8%.
Packing, packaging and marking of extruded grain products are carried out in
accordance with the requirements specified in the normative documentation on
Extruded Dry Breakfasts.
