market as “organic”. Seventeen certification bodies accredited internationally are
included in the official list of certification bodies in the organic sector for Ukraine in
accordance with Regulation 1235/2008 (as of 14.12.2017). Among them, only one
Ukrainian certification body is Organic Standard, but it serves more than 70% of
organic market operators in Ukraine.
3. Regarding the improvement of the legal regulation of the organic market, the
Law of Ukraine “On Basic Principles and Requirements for Organic Production,
Turning and Marking of Organic Products” [7] was adopted on July 10, 2018, and it
will be put into effect on August 2, 2019. This law is the foundation for the formation
of an effective regulatory field for the production and circulation of organic agricultural
products. The law brings the requirements for the production and circulation of organic
products in compliance with European and world standards, and introduces state
supervision and control over the economic activities of organic products market
participant. An important aspect of the new Law is the establishment of administrative
responsibility of market operators for violating the legislation on organic production,
circulation and marking of organic products.
Adoption of the “organic” law will give an impetus to the sustainable
development of organic production in Ukraine, increase the competitiveness of organic
products and expand the external markets for its sale. In addition, this law is important
for harmonizing national legislation with the European requirements for organic
production.
Research of organic oat flakes quality. Due to the fact that there are more and
more enterprises producing oat flakes in Ukraine, the informed consumer has the
opportunity to choose the products of different brands in their own preferences.

play important role.
We carried out research on the quality of flavors of oat flakes of organic Ukrainian
producers of two brands - TM «Organic Country» (producer - Organic Life LLP) and
TM «Ecorod Special» (producer - Organic Original LLC) using the organoleptic
method. The essence of this method is the use of information obtained through the
analysis of sensations obtained through the sensory organs - vision, hearing, smell,
touch and taste. According to the results of research it is possible to draw conclusions
about the benefits of consumers and their motivation when choosing a particular food
product.
For a more complete thorough study, a scoring scale for evaluating the quality
indicators of organic oat flakes has been developed. This scale facilitates a comparative
evaluation of food concentrates by results of tasting (Table 3). We used five basic levels
