According to the data presented in Fig. 1, it can be concluded that the experimental
samples of oat flakes have high quality.
The tasters did not reveal unacceptable defects in taste and smell, which include
sour, unpleasant, moldy taste and smell. The intensity of bitter taste was noted as
“barely felt” for TM “Ecorod Special” and “weak intensity” for TM “Organic
Country”. This slight bitterness is naturally inherent in oats and products from it and
therefore it does not reduce the quality of flakes.
The tasters noted more intense evidence, sweetness, harmony and pleasure of the
taste and smell in organic oat flakes of TM “Organic Country”. Perhaps this was
facilitated by more gentle hydrotermic treatment and owing of oats, and as a result of
this taste and aromatic substances are better preserved in products. However, these
flakes are recommended to cook for 10-15 minutes. (for comparison, organic oat flakes
of TM “Ekorod Special” can be cooked only for 3 minutes.)
CONCLUSION
1. The world organic products market continues to grow. The turnover of
commodities of the world market of organic food products reached 89,7 billion USD
in 2016. The leaders in commodity turnover are the United States, Germany, France
and China.
2. Among other countries, Switzerland is the country, where people spent the
most money for organic food (274 Euros), as well as EU residents (60,5 euros). In
Ukraine, the consumption of organic products per capita is significantly lower than in
the EU countries, and is 0,5 euros.
3. The growth rate of domestic organic products is 5,5 times higher than in
European countries, and 4,9 times higher than in the world. The volume of organic
food exports in 2016 was estimated at 50 million euros.
4. The main problems of the development of the organic market in Ukraine are
low purchasing power of the majority of the population; lack of awareness of
consumers about the quality and usefulness of organic products, as well as features of
their labeling, imperfect legislation in the field of organic production, circulation,
certification and marking of organic products.
5. Ukraine ranks eleventh among the countries of Europe for the total area of
agricultural lands certified as organic. Almost half of these lands (45.4%) grow crops,
therefore, there are all conditions for obtaining various products of processing organic
grain - flour, cereals, macaroni products, cereal flakes.
6. Organic oat flakes began to be produced in Ukraine at the Novoukrainka plant
in Ukraine in 2007. Now the production of Ukrainian organic oat flakes has already
been represented by the following brands: ТМ Zhmenka, TM Ekorod, TM
OrganicCountry, ТМ Kozub Organik.
